Zotovich Family Vineyards 2008 Estate Chardonnay, Sta. Rita Hills, 750ml

Our Chardonnay is whole cluster pressed before we rack it into tank. A true California Chardonnay, this wine was allowed to ferment in varying levels of new, once used, and neutral French Oak barrels. Wine remained in barrel for 18 months. The intent was to use oak to ensure slow oxygen transfusion and tannin polymerization (not to over oak the wine). Aromas of lemon, apple, citrus, and a hit of wet stone are followed by a subtle suggestion of toasted oak. Balanced acidity and rich texture come together to create a fine balance. This wine is full, round, and heavy in your mouth. It is completed by an exceedingly long finish with hinted minerality.
