For many Champagne lovers, especially in the US, this is the house for rosé. While Billecart-Salmon is deservedly renowned for this delicate, impeccably balanced bottling, the house's other cuvées also emphasize purity and precision of flavor, with an emphasis on Chardonnay. The special cuvees are where things really get exciting, most notably the Clos St.-Hillaire, taken from a single Pinot Noir vineyard. This is an exceptional blanc de noir.

This is THE Brut Rose, no question about it. Rare, dignified and the ultimate in sparkling wine, this non-vintage rose is as delicious as it is hard to come by. Tangerine, pear and flowers on the nose, which is complicated by a note of fennel. Broad and sappy but dry, with lively orange and strawberry flavors and a subtle note of spice cake. Weightier on the finish, which features an exotic note of spicy herbs. This Champagne’s delicate touch will make it work well with simple seafood dishes or even sashimi.
